FFWD: Spinach and Bacon Quiche


This is a winner of a quiche. So simple (yes, even the pastry..) and so delicious. There is nothing like the combination of fresh spinach and bacon. It's a match made in heaven and I never get tired of it.  I'm a big fan of breakfast dishes and will happily eat things like omelettes for dinner, so I was very excited to try this elegant and eggy treat.



I love that Dorie calls for sautéing fresh spinach for this. It doesn't take much longer than defrosting a block of frozen spinach and the flavor and color are so vibrant. I could eat this every day. I'm always looking for ways to incorporate more greens into my diet and this is my favorite option so far....with bacon and a pastry crust!




Topped with grated Parmesan, this quiche has all of my favorite flavors: minerally greens; toasty, salty cheese; crispy, porky bacon bits, creamy custard and flaky, buttery pastry. This made an amazing week-night dinner for us this week next to a fresh salad of greens and tomatoes (that actually tasted good). Thank goodness for spring!     Your quiche came out great and same with all the photos. We had ours with a green salad too, yum!

    well together. Your pictures are great and carry you through the recipe nicely. Tricia and I both thought the recipe was a keeper, and would
    make a wonderful addition to a lovely brunch.

  15. quiche you say? if i bake a quiche i put so much bacon, cheese, and half n half that spinach would not help.... but man does it taste good! YOUR CRUST looks delightfully crispy!
